Giant Meatballs

Dave decided to make giant meatballs for dinner with a homemade sauce.    Dinner consisted of Meatball, crusty bread and side salad. So yummy.  We sliced the left overs and made meatball subs for dinner the next night.  It is much easier to slice large meatballs and put them on a bun compared to regular sized meatballs.

I would give you a recipe if there was one but there isn't.

I can tell you this:
  • 1lb Hot Italian Sausage Meat
  • 1lb Ground Beef
  • 2 Eggs
  • parmigiana
  • garlic, oregano & basil
  • chili flakes to taste
  • salt & pepper

Mix and form balls, brown before in a pan then cooking in a tomato sauce of your choice.

Check out the picture below.  The meatball was bigger then my fist.

Frito Snack

The girls came over for Stitch 'N' Bitch on Monday.  I have had a this recipe in my back pocket for the last few weeks and knew I wanted to make it.

It took no time at all to make and was rather tasty.  It was an addictive snack.  The salty and sweet went together so well.

Here is what you do.
Spread a bag of Fritos corn chips in a baking sheet.
Melt together 1 cup each of corn syrup and sugar and bing to boil.
Remove from the stove top.  Mix in 1 cup of peanut butter and drizzle over corn chips.
Let cool cut up and serve.

I drizzled melted chocolate over the whole thing.  I have heard of adding candy corn, M & M's.  really it is up to you what to garnish with.

I forgot to take a a picture of the finished product.  Booo

Cherries 2010

So is any one else hot?  It is really hard to do any canning in this heat.  I harvested the last of our rhubarb yesterday and made a Cordial for Rhubarb Soda.  Yes I have been boiling things.  But don't worry it has been on the BBQ.

Last night I pick up 10lbs of local cherries from The Buying Club. I was up really late last night processing the fruit.  Here is the break down.

2 Small Freezer bags full
5 Pints of Cherries in Syrup
5 half Pints of Cherry Syrup
1 1/2 Cups of Pits

I have just discovered cherry pits hold heat well.  I have a few creative ideas floating around on what to do with them.  You will have to wait and see. So far I can tell you this:

How To clean Cherry Pits.
  1. Rinse them as you would pumpkin seeds
  2. Boil them  with some lemon juice to help breakdown the remain flesh
  3. Lay them in the sun to dry

Note: Otis labeled the Rhubarb Cordial.

Funemployment BBQ

We had a Funemployment BBQ this weekend to celebrate my unemployment.  Friends brought over Sausage from Vincenzo's.  I love how they package their meat old school with butcher paper and twine.

I won't lie though I was disappointed in the plastic bag inside.  I posted a few years back about freezer paper stenciling.  This is the paper you use to make those stencils. If you ever come across clean butcher paper stash it away for a quick D.I.Y. project.

Here is a quick plug for President's Choice products.  This was the scene on my counter on Saturday.

I love the bowl of cherries in the corner.  Just about everyone that brought chips purchased President's Choice.  I wonder how long Ballpark Hot Dog chips will be around.

Cooking Channel

Otis just made me "Goat cheese with chicken and spaghetti" from his play kitchen.

He brought over a little plate with a piece of wooden chicken on it.

He is addicted to the "cooking channel".
Chopped and Diners, Drive-Ins and Dives are his favorite shows.  There could be a chef in the making.

On a side Note:

I saw a commercial for this show last night.

I love how much of an impact South Park has on our lives.
